Blackened Salmon Steak
Salmon steaks are not always easy to find, especially wild salmon, which has become increasingly costly to buy because of its limited availability and short fishing season. If you do manage to find one, seize the opportunity — it truly ranks among the most delicious and elegant meals you can serve. I had been craving it for quite some time, and at last, last weekend my husband and I indulged in a splendid, memorable feast. Unlike fillets or boneless cuts, salmon steaks often contain a few small bones, so they demand a little extra attention when eating, but it’s nothing troublesome. I marinated the steaks for two days to deepen the flavour, then seared them for about five minutes on each side. The intense heat caramelizes the spices and browns the salmon, forming a dark, flavourful crust while preserving the tender interior. The addition of maple syrup helped achieve beautiful caramelizing results and added a delicate sweetness that complemented the fish. The final dish was superb — an elegant, deeply satisfying meal well worth trying.
Blackened Salmon Steak Recipe

Preparation Time: 2 days to marinate
Cook Time: 10 minutes
Yield: 2 steaks
Ingredients:
2 x 200 g Salmon Steaks
1/4 cup soy sauce
2 tablespoons pure maple syrup or honey
3 tablespoons sesame oil
One 4 cm piece of fresh ginger—peeled, thinly sliced or shredded
2 garlic cloves, smashed
2 scallions, thinly diced
Instructions:
In a large, shallow glass dish, whisk the soy sauce with the maple syrup and sesame oil. Add the salmon steaks and turn to coat. Press the ginger and garlic onto both sides of the steaks. Cover and refrigerate for 2 days, turning the salmon a few times during marinating.
Heat olive oil in a cast iron skillet over medium-high heat.
Remove salmon from marinade and pat dry. Boil remaining marinade in a small saucepan over high heat until thick and syrupy, about 3 minutes. Strain the glaze into a small bowl.
Place the salmon steaks in the hot skillet and sear undisturbed for 3-5 minutes on each side without flipping or moving. Adjust cooking time based on thickness.
Transfer salmon steaks to plates and spoon the glaze on top.
