Oatmeal Lace Cookies

Simply Oat Lace Cookies — thin, crisp, and utterly addictive. A departure from the familiar, hefty Canadian oatmeal cookie, these are inspired by Nichole Accettola’s Scandinavian from Scratch but reimagined without the chocolate filling. The result is wafer-thin, golden lace cookies where toasted oats replace traditional almonds, giving a delicate nutty crunch that pairs exquisitely with a gentle drizzle of melted chocolate (optional). They come together quickly, bake into impossibly crisp edges, and are impossibly good with a cup of tea—light, elegant, and delightfully different from the typical thick oatmeal cookie.

Oatmeal Lace Cookies Recipe

Yield: 24 cookies

Ingredients:

  • 170 g quick oats

  • 150 g brown sugar

  • 2 tablespoons all purpose flour

  • 1 tsp baking powder

  • 1/4 tsp sea salt

  • 115 g unsalted butter, melted

  • 1 large egg

  • 1 tsp pure vanilla essence

  • bittersweet chocolate, melted to drizzle cookies (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).

  2. Line baking sheet pans with parchment paper.

  3. In a large bowl, whisk together oats, sugar, flour, baking powder and salt.

  4. In a small saucepan set over medium heat, gently melt the butter until just liquefied. Immediately pour the warm butter into the bowl with the flour mixture, stirring steadily until the ingredients are fully combined. Add the egg and the vanilla extract, then continue stirring until the mixture comes together to form a dough.

  5. Drop the dough by teaspoon onto prepared baking sheet pans, spaced about 2.5 cm a part.

  6. Bake for 6–8 minutes, turning the baking tray halfway through so that the heat browns them evenly, until they reach a lovely golden brown. Allow them to rest on the baking tray for about 5 minutes, or until they have firmed up enough to be lifted without falling apart, then transfer them to a wire rack to cool completely.

  7. Oatmeal lace cookies can be lightly drizzled with a ribbon of good-quality chocolate for an elegant touch, but they remain delightfully crisp and flavorful even without it.
