Pistachio Streusel Strawberry Brioche Recipe

Ingredients:
Ingredients for the dough:
500 g all purpose flour
7 g dry yeast or 12 g fresh yeast
2 eggs
40 g unsalted butter melted butter
1 tsp pure vanilla essence
40 g sugar
250 ml lukewarm milk
pinch of salt
72 small fresh strawberries ( use 4 per brioche), washed and whole
1 egg wash mixed with 1 tablespoon of water
Pistachio Streusel:
1/3 cup cold shredded butter
1/3 cup brown sugar
1/3 cup flour
1/3 cup unsalted pistachios, no shells
Instructions:
To make the dough starter combine 2 tablespoons lukewarm milk with 1 tablespoon sugar, 2 tablespoons of flour and yeast. Whisk to completely dissolve all ingredients. Wait 10 minutes until it forms a bubbly crust.
Sieve flour, add all sugar, eggs, pinch of salt, yeast mixture and milk. Mix the dough with the Danish whisk and add melted cooled butter.
Work the dough thoroughly until it becomes elastic, smooth, and shiny, which usually takes about 10 minutes of consistent kneading. If the dough feels too sticky during the process, gradually add a little more flour to make it easier to handle.
Cover the dough with a clean linen towel and let it rise in a draft-free area for about 1 hour, or until it has doubled in size. Alternatively, you can place the dough in the fridge for an overnight slow fermentation, which will enhance both the flavor and the texture of the dough.
In the meantime, prepare the pistachio streusel by carefully combining equal amounts of sugar, flour, shredded cold butter, and crushed pieces of pistachios. Mix these ingredients thoroughly until they form a crumbly texture. Place the streusel in the refrigerator and let it chill until you are ready to use it.
Prepare the strawberries by gently washing them under cool water and then carefully drying them with a clean towel. Once dried, set them aside for later use. Note: if your strawberries are larger in size, use two per brioche to ensure balanced flavor. Avoid cutting the berries, as releasing their juice can cause the dough to become soggy and affect the texture.
Weigh the dough and divide evenly into 18 pieces. Shape each piece into a ball.
Flatten each ball gently using a rolling pin or the palm of your hand, then carefully place 4 berries in the center. Wrap the dough around the berries to form a neat bundle, ensuring the filling is fully enclosed. Place each bundle on a baking pan that has been lightly greased and lined with parchment paper. Make sure to leave a space of about 5 cm between each one to allow for even baking and expansion.
Let the brioche rise for 30 minutes covered with linen towel.
Uncover the brioche and gently brush it with egg wash twice, as the first layer will absorb some of the liquid, ensuring a rich and glossy finish. Next, shred the pistachio streusel using a coarse grinder, then generously sprinkle ton top of each brioche to add a delightful crunch and flavor.🍁
Preheat oven to 350°F or 180 °C.
Bake for 15-20 minutes until golden brown.
Remove from the oven place on the cooling rack and let them cool down completely.
