Savory Potato & Cheddar Brioche Buns with Thyme and Onions
There’s something wonderfully comforting about homemade bread, especially when it’s soft, buttery, cheesy, and filled with layers of savory flavor. These Savory Potato & Cheddar Brioche Buns with Thyme and Onions are exactly that kind of bake — golden and tender on the outside, pillowy-soft inside, and topped with creamy mashed potato, sharp cheddar, sweet caramelized onions, and fragrant fresh thyme.
The brioche dough is rich and buttery, creating a beautifully soft base for the savory topping. Creamy mashed potatoes and melted cheddar cheese — widely available, though I chose my husband’s ancestral Irish Dubliner — make every bite wonderfully satisfying, while thyme-scented onions add a subtle sweetness and aromatic depth. As the buns bake, the cheese melts into the potato mixture and the tops turn irresistibly golden, bubbly and deeply inviting.
My recipe has been lovingly inspired by a traditional Polish Kołaczyki buns my Mom used to make back in Southern Poland. We would often enjoy these delicious buns alongside a steaming bowl of soup or a hearty cabbage stew.

Savory Potato & Cheddar Brioche Buns with Thyme Onions Recipe

Yield: 30 buns
Ingredients for yeast dough:
500 g all-purpose flour
30 g fresh yeast or 10 g active dry yeast
1 cup lukewarm milk
1 teaspoon granulated sugar
2 large eggs, at room temperature
½ teaspoon sea salt
¼ cup olive oil
Ingredients for potato-cheddar filling:
500 g Russet potatoes, boiled
2 large onions, finely diced
200 g Cheddar cheese, shredded
1 tablespoon unsalted butter
2 teaspoons fresh thyme, finely chopped
Salt and freshly ground black pepper, to taste
For The Egg Wash:
1 egg yolk
30 ml milk
Instructions:
1.Prepare the Dough:
In a large bowl, combine the flour and salt.
In a separate bowl, dissolve the yeast in the lukewarm milk. Add the sugar and olive oil, then whisk in the eggs. Mix well and let the yeast mixture stand for about 10 minutes.
Pour the yeast mixture into the flour. Stir with a Danish dough whisk or wooden spoon until a shaggy dough forms.
Transfer the dough to a lightly floured work surface and knead until it becomes smooth, soft, and elastic.
Place the dough in a lightly greased bowl or pan and cover with a clean linen or tea towel. Leave it in a warm, draft-free place until it has doubled in size, about 1½ hours.
2. Make the Potato-Cheddar Filling:
While the dough is rising, prepare the filling.
Boil the potatoes until completely tender. Drain well and pass them through a potato ricer while they are still warm. This creates a light, fluffy, lump-free mash.
Melt the butter in a skillet over medium heat. Add the diced onions and cook until golden and caramelized.
Add the golden onions to the mashed potatoes, followed by the shredded Cheddar and fresh thyme. Season generously with salt and freshly ground black pepper. Mix until everything is evenly combined.
Divide the filling into 30 equal portions, approximately 25 g each, and shape each portion into a small ball. Cover and set aside while you finish preparing the dough.
3. Shape the Buns:
Once the dough has doubled in size, gently deflate it and divide it into 30 equal pieces, approximately 28 g each.
Cup your hand over a piece of dough and roll it against the counter to create tight, smooth round balls.
Place balls on a parchment-lined baking sheet, leaving about 2 cm of space between each bun.
Cover loosely with a clean tea towel and let them rest for 10 minutes.
4. Add the Filling:
Preheat the oven to 200°C (392°F).
Using the rounded back of a measuring spoon, gently press an indentation into the center of each bun.
Place one potato-Cheddar filling ball into each indentation and gently flatten it with your hand so it sits securely in the center of the dough.
Whisk together the egg yolk and milk to make the egg wash. Brush the exposed dough around the filling with the egg wash.
Let the prepared buns rise for another 10 minutes.
5. Bake:
Bake in the preheated oven for 15–20 minutes, or until the buns are puffed and the edges are beautifully golden brown.
Remove from the oven and allow them to cool for a few minutes before serving.

Recipe Notes
For the fluffiest filling: Use a potato ricer rather than a masher. It produces a wonderfully smooth and airy potato mixture without making the potatoes gummy.

Make-ahead option: The potato-Cheddar filling can be prepared in advance and refrigerated until you're ready to shape the buns. Bring it close to room temperature before filling the dough.
For best results: Make sure the milk is lukewarm rather than hot. Milk that is too hot can damage the yeast.
