Strawberry Tart

Strawberry season is finally here, and with it comes our joy in creating all sorts of delicious sweets to treat our loved ones. We recently visited a wonderful strawberry farm near Ancaster, Ontario, which was a refreshing experience. Not too long ago, family farms were just a short walk away, making it easy to stay connected with our food sources. Unfortunately, nowadays, many of us feel much more disconnected from where our food actually comes from. This disconnection is partly due to poor urban planning by city developers, which hasn’t prioritized living a more sustainable lifestyle.

I love to share this delightful recipe with you because it is incredibly simple and quick to make. All you need are a few basic ingredients: phyllo pastry, fresh strawberries, sugar, and butter. With just these easy-to-find items, you can create a delicious treat. So, let’s go ahead and give it a try together.

Strawberry Tart Recipe

Yield: 12 servings

Ingredients:

  •  10 phyllo sheets, defrosted pastry

  • 1 Litre fresh strawberries, slices

  • 1/3 cup sugar

  • 3/4 butter, melted

  • 3 tablespoons of strawberry jam

  • 25-26 cm Deep Pie Pan (ceramic or clay pan)

  • Creme pâtissier, fresh whipped cream or vanilla ice cream as a garnish, optional

Instructions:

  1. Butter the entire pie pan thoroughly with melted butter, ensuring every corner is well coated. Place one phyllo sheet at a time into the pan and brush it generously with melted butter. Repeat this process until you have used all the phyllo sheets and the pan is nicely lined and well coated on the inside with the phyllo pastry.

  2. Heat the strawberry jam gently until it becomes fully liquid and smooth, then carefully brush it over the very top layer of the phyllo pastry. Set it aside to allow the glaze to settle.

  3. Preheat oven to 180°C or 350°F

  4. Wash and thoroughly dry the strawberries. Slice them carefully into even slices and gently mix them with the sugar until they are lightly coated. Then, evenly place the strawberry mixture on top of the prepared phyllo pastry in the pan.

  5. Bake on the middle shelf for about 1 hour, until the pastry is golden brown and the strawberries have released most juice, which mostly evaporates, leaving tender, caramelized fruit.

  6. Let the strawberry tart cool for 30 minutes.

  7. Serve the strawberry tart alongside a generous dollop of creamy crème pâtissière, fresh whipped cream, or a scoop of vanilla ice cream. Alternatively, you can simply enjoy the tart on its own to fully appreciate its natural flavors.
