Elderberry Syrup
This elderberry syrup is a treasured natural remedy, packed with immune-boosting nutrients. Made raw, it retains all berry goodness. We love visiting Berrylicious Fruit Farm in August for fresh elderberries; they also offer frozen ones year-round. We enjoy the syrup in tea, on pancakes, with mineral water, or by the spoonful at the first sign of a cold. It's a flavorful, healthful staple in our home.
Note: Elderberry stems contain toxic compounds that can cause illness if ingested, so they should never be eaten raw or untreated.
Elderberry Syrup Recipe

Yield: 1 litre
Ingredients:
1 kg Elderberries, fresh from Berrylicious Fruit Farm
1 kg raw honey
Instructions:
Gently crush the fresh, ripe berries using a potato masher until they release their juices.
In a clean, sterilized 2-liter jar, mix the crushed berries with honey until well blended.
Cover the jar with cheesecloth and secure it with a rubber band. Let it sit at room temperature for two weeks. Shake the jar at least once a day.
After two full weeks of infusion, carefully strain the syrup through a fine cheesecloth to remove all solids. Pour the clear, aromatic syrup into clean, sterilized bottles, seal them tightly to preserve freshness, and store in the refrigerator. Properly stored, this delicious syrup can last for several months without losing its flavor. Don’t discard the leftover elderberries—use them to prepare a flavorful compote or fold them into muffin batter for a delightful twist.
