Newfoundland’s Blueberry Muffins

Blueberries come in many delightful varieties and are typically available from July through late August. While on our memorable family vacation in Newfoundland in 2005, I purchased a charming little recipe pamphlet titled “Newfoundland’s Favourite Blueberry Recipes,” which features over 100 delicious blueberry-based recipes. These recipes are homestyle and traditional, designed to be both easy and quick to prepare, making them perfect for busy days. Today, I would love to share with you a wonderful recipe for blueberry muffins called “Gerry’s Blueberry Oatmeal Muffins” that my family and friends absolutely adore! These muffins are not only tasty but also perfect for picnics and breakfast gatherings.

Newfoundland’s Blueberry Muffins Recipe

Preparation Time: 1 hour( including pre-soaking oats)

BakeTime: 20 minutes

Yield: 12 medium size muffins

Ingredients:

  • 1 cup rolled oats

  • 1 cup buttermilk

  • 1 cup all-purpose flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 cup brown sugar

  • 1 large egg (beaten)

  • 4 tbsp, melted shortening (I used unsalted butter)

  • 1 cup blueberries from Berrylicious Fruit Farm( fresh or frozen)

  • 1/4 cup rolled oats to sprinkle over the muffins

Instructions:

  1. Place oats in bowl, add the buttermilk and let it stand for approximately one hour. (Makes fluffier muffins.)

  2. In large bowl combine dry ingredients. Combine egg and melted butter to oat mixture. Add dry ingredients.

  3. Fold gently blueberries into the batter. Do not over-mix.

  4. Place in greased regular size muffin pans, filling 2/3 full (or evenly divided). Sprinkle rolled oats over each muffin for nicer presentation. Place in hot oven 375°F or 190°C for approximately 20 minutes.

Tips: Not sure if your baking powder is active and lying too long in your cupboard? Here’s an accurate test: mix one teaspoon of baking powder in a half cup of water. If it fizzes, it is still good to use.
