Sourdough Crackers Recipe

Yield: 50 crackers
Ingredients:
250 g sourdough ferment
125 g unsalted butter, melted
2 tsp fresh rosemary or fresh herb of your choice, chopped
sea salt flakes
sesame seads (white and black), optional
Instructions:
Preheat oven to 350°F (175°C).
Melt the butter and let it cool for 2 minutes.
In a bowl, combine sourdough starter and melted butter. Stir in fresh herbs.
Pour the dough evenly over the parchment paper and, using the help of a cake spatula, gently spread the dough as thinly and evenly as possible to form a rectangular shape measuring approximately 30 cm by 43 cm. Carefully place the sheet with the dough onto a medium-sized cookie sheet. Sprinkle the dough evenly with small amount of sea salt flakes and sesame seeds.
Bake for 10 minutes, then carefully remove the tray from the oven and gently cut the dough into small square or rectangular shapes using a pizza or wheel pastry cutter. After cutting, return the tray to the oven and bake for an additional 10 minutes, or until the crackers turn a delicate, light golden color.
Allow the crackers to cool completely before storing them. Once cooled, place them carefully in a jar covered with a lid to maintain their freshness.
